BBQ Chips And Blue Cheese Dip = The New Super Bowl Classic

I’m hosting a big Super Bowl party this year and want to keep it as easy-breezy as possible. While brainstorming which apps to serve I was reminded of my favorite childhood snack, barbecue chips dipped in sour cream (how could I ever forget?!). Once I remembered I suddenly had to have it. I picked up some BBQ chips and a tub of sour cream from my corner bodega, and upon first lackluster bite, quickly came to the realization that I seem to now like more adult flavors, like blue cheese, and, you know, whiskey.

But chips and sour cream used to be easy, and so exciting – crunchy, smoky-sweet chips dunked in cool, creamy dairy... Well, I wasn’t going to give up that easily. There must be a way to reinvent my childhood favorite and make it Super Bowl Sunday-worthy. So I went on a search. 

First and foremost, I needed a great chip. As learned, overly-salted, stale chips just won’t do. And Carolina Dirt BBQ Kettle Chips made by Lillie’s Q in Chicago might just be the absolute best ones north of the Mason-Dixon line. They’re seasoned with one of the best barbecue rubs out there, a "Carolina Dirt" rub inspired by the clay-colored soil found in the Carolinas. I’m pretty confident these light, crunchy chips flavored with layers of chipotle, cumin, mustard, ancho chile, garlic and brown sugar will score me some major host points.

Now, on to the dip. Straight up sour cream does have its time and place (looking at you, four-layer dip), but when it’s the only thing in the bowl? Womp womp. I’m always looking for ways to use the Blue Cheese Powder from Rogue Creamery. (If you like blue cheese, you need this: Just a few shakes turn popcorn into a party, and it's also awesome on roasted potatoes, eggs, burgers, wings or in a tomato tart... You get the idea.) So why not mix it up with the sour cream? 

By those two powers combined, hereby is the best version of the barbecue chip + sour cream combo ever tasted:

The New Super Bowl Classic

1 16-ounce container sour cream
1 3-ounce shake bleu cheese powder
6 1.65-ounce bags Lillie’s Q Carolina Dirt BBQ Kettle Chips
2 tablespoons snipped chives

DIRECTIONS 

1. In a large bowl, mix together sour cream and Blue Cheese Powder to taste. Garnish with snipped chives (your green thing for the day).
2. Serve alongside a bowl of Carolina Dirt BBQ Kettle Chips, or, here’s a fun idea: Pass out individual, personal bags of chips so no one knocks heads during the chip-dip huddle! 

Total time: 5 minutes
Serves: 6
