Easy Peanut Butter, Yogurt And Spicy Honey Paletas

Peanut butter. Yogurt. Spicy Honey. Uh huh.

Our friends at Bushwick Kitchen are always coming up with Mouth-watering ways to use their Spicy Honey (drizzled on pancakes in the morning, pizza in the afternoon and cheese at night), but these Peanut Butter & Spicy Honey Paletas might be our favorite way yet.

Cooling yogurt mixes with rich peanut butter and sweet, spicy honey to make these satisfying, summertime pops. The yogurt tempers the heat from the honey, and the creamy peanut butter rounds it all out. Before serving, they’re rolled in crushed peanuts and smothered in a fresh drizzle of honey. We’re pretty sure you’ve never had anything like these before. (Well, at least we hadn't.)

We’re also pretty sure these are going to become your go-to sweet-yet-savory snack for casual pool parties and barbecues, or even more upscale shindigs that call for a quick yet surprisingly elegant dessert. And with only three ingredients, they couldn’t be easier to make.

PEANUT BUTTER & SPICY HONEY PALETAS

2 cups Greek yogurt
¾ cups smooth peanut butter
2 tablespoons spicy honey
Crushed peanuts, for garnish

DIRECTIONS
  1. Combine all ingredients in a large bowl. Whisk together until well blended.
  2. Pour mixture into any sort of mold, such as popsicle or extra-large ice cube trays. Bushwick Kitchen used 2-ounce plastic cups, which yielded 8 paletas.
  3. Freeze until just beginning to set, 35-45 minutes. Insert a stick into each pop. Freeze until firm, about 1 hour longer.
  4. When ready to serve, roll in crushed peanuts and drizzle with more Spicy Honey.

Total time: 2 hours
Serves: makes 8 paletas

Note: Try swapping the peanut butter for tahini and the crushed peanuts for sesame seeds!
