Two Thumbs Up For This Raspberry Thumbprint Cookie Recipe

Baking in the winter is rewarding for two reasons. First, I don’t have to leave my apartment, which is great because, baby, it’s too cold outside. Second, baking gives me the satisfaction that I’ve accomplished something (and if I do the dishes too, I’ve really knocked it out of the park). So when I’m sprawled across my couch eating warm cookies and drinking wine on Saturday night, I don’t feel guilty. Hey, I’ve worked hard! I deserve this.

After trying Inna Jam’s Polka Raspberry Jam recently, I became obsessed and started putting it on everything – oatmeal, ice cream, toast, yogurt and more. I couldn’t get enough. But I needed a new vehicle, and thumbprint cookies seemed like just the right choice. They are super easy to make – almost as easy as consuming them. 

Now I have a new cookie to leave out on Christmas Eve. Santa will be thrilled! 


1 ¾ cups all-purpose flour
½ teaspoon baking powder
½ teaspoon salt
¾ cup unsalted butter (room temperature)
2/3 cup sugar
1 large egg (room temperature)
½ vanilla bean (seeds scraped from the pod)
1 teaspoon vanilla extract
1/3 cup Polka Raspberry Jam
¼ cup confectioners’ sugar (optional)

  1. Preheat oven to 350°.
  2. Whisk together flour, baking powder and salt.
  3. In a separate bowl, use a hand-held mixer to whip the butter and sugar. Once incorporated, add egg, vanilla bean, and vanilla extract. Then slowly add dry ingredients and mix until dough comes together.
  4. Line two baking sheets with parchment paper. Form one-inch balls to place on baking sheets (about 12-15 cookies per sheet so they have room to expand).
  5. Here comes the fun part! Press your thumb into the center of each cookie ball. Fill the imprint with Polka Raspberry Jam. Don’t be shy because the jam is so flipping good!
  6. Bake cookies for about 15 minutes. Pour confectioners’ sugar into a fine-mesh strainer and dust cookies to look like they have a fresh coat of snow.

Serves: 25 cookies
